Menu Plan Monday - 4.3.2011


Can you believe it is already April?  I love spring!

I have been experimenting with canning beans this week in preparation for canning season.  I wanted to try out the Tattler Reusable Canning lids that I had.  I am planning on doing a review of these soon so stay tuned.  I definitely will be stocking up on them before summer.  I have never canned pinto beans before.  They were really easy to can and so you will see some bean recipes this week because I am going to use them to see how they taste.  I bought 10 lbs. of pinto beans at Sam's Club for $6.26 in case you were interested, but I only canned about 5 lbs. which turned out to be about 12 quarts of beans.  I used the recipe in Ball's Blue Book of Canning.


Breakfast:
Whole wheat English muffin, natural peanut butter, banana and milk 
Yogurt, fresh or frozen fruit and granola
Banana Baked Oatmeal, turkey bacon and applesauce
Eggs, turkey bacon and oranges

Apple Bacon Cheddar Frittata 

Lunch:
Leftovers

Sandwiches, carrots, apples
Whole wheat tortilla pizza and salad

Baked chicken nuggets, carrots, salad and oranges 
Black Bean Taco Salad and oranges

Suppers:

Sunday: 
Filet au Poivre, sweet potato fries, spinach salad, and peaches - didn't have this last week

Monday:
Sweet N Sour Beans, salad and cornbread


Tuesday:
Sweet and Tangy BBQ Beef Roast, baked french fries, salad and oranges


Wednesday:
Beans and Rice, tortilla chips and corn

Thursday:
Spaghetti and Meatballs, salad and fruit smoothies - we didn't have this last week


Friday:
Pizza - BBQ Chicken Pizza or Chicken Alfredo Pizza
Sloppy Joes Pizza  
Strawberry Peach Slushie
Or Pizza out - lets be honest we all have those weeks

Saturday:
Leftover Buffet


Snacks:


Apple and cheddar
Strawberry Peach Yogurt Smoothies
Cheese Tortilla and salsa
Popcorn

  1. Wow! I ordered beans (seeds for planting) to try either keeping them dry or maybe canning them this year. I am looking forward to reading how you like these. Please include what your family thinks too...kids, husband, next door neighbor...the more opinions the merrier! :)

    Thank you - I will keep you posted! Two out of my three kids like beans so I am hoping most of the family will like them.
    I didn't grow beans this year because I don't have the room:(
