Grillin time - A whole meal on the grill (almost)

My husband got a new-to-him grill and he has been wanting to use it almost everyday which is great with me because all I have to do is prep the food and he makes it for me.  This was the case last night.  We tried out beef brisket on the grill.  Well, we started it in the oven because it has to cook for hours since it is kind of a tough cut.

This was by far the best meal we have had in a long time. 
  • Beef Brisket - I used Kittencal’s Beef Brisket Recipe.  I did everything she said except for the last two hours we cooked it on the grill with the wood chips (they are in the box on the grill).  Then the last 45 minutes I transferred it to a lidded oven proof bowl with more BBQ sauce and just let it finish cooking at 250 degrees with the baked beans in the oven.
  • Baked Beans - I drained off the juices from the brisket when I transferred it to the grill and strained the onions out.  I poured the juices into a 9x13 inch pan with 2 quart size jars of my home canned pinto beans then I added brown sugar, BBQ sauce, ground mustard and liquid smoke.  Just stir and bake at 250 for a few hours but don’t let it get too thick.
  • Baked potatoes - Oh these were the best potatoes I have ever had.  I cleaned the potatoes and stuck them a few times with a fork.  I precooked them in the microwave for 8 minutes (we had 8 potatoes) and then I got a big square of foil and poured olive oil in there and poured all natural sea salt over each side.  I wrapped them up in foil and we put them on the grill and cooked them until they were done.  I just squeezed them and if they were soft then they were done.
  • Corn! - Who doesn’t love sweet corn?  I had frozen ears from last year’s corn so I just took it straight out of the freezer and wrapped each in foil and put them on the grill with the potatoes about 30 minutes after the potatoes.  They turned out tender and juicy and delicious. 
  • Pineapple - We have a pineapple corer (because we love pineapple!) so it makes it really easy to cut it.  It makes nice pretty rings so I put the rings in a bowl and poured honey on them and allowed them to marinate for about 30 minutes to an hour (or overnight) and then grill 4-5 minutes on each side until you get the grill marks.  Yummy!

And I have an update on my homemade BBQ sauce.  I posted it earlier this week but I tweaked it just a little since then and now I am truly happy with it and my dad liked it and my dad does not love a lot of things so I consider that a winner.  He now is requesting my salsa and my BBQ sauce for his birthday and Father’s Day and whenever else I see him.
Here is the updated BBQ sauce.  Again, it is adapted from Cooking During Stolen Moments.
For the barbecue sauce:

  • 1 1/2 c. ketchup
  • 2 T. Worcestershire sauce
  • 1/4 c. brown sugar
  • 1/2 t. each – pepper, cumin, chili powder, garlic powder
  • 2 T. honey
  • 2 T. liquid smoke
  • 1 T. ground mustard
Add everything to a small bowl and stir until combined.  Microwave for 1-2 minutes and then you can refrigerate until ready to use or use immediately.  Also taste the sauce and if you like a little more sweetness add more honey.  You can kind of tailor it to your taste.  I just grab the honey and pour it in there until it taste good to me, but I start with 2 tablespoons. 
There you have it - a whole meal to make for your family or your guests.  It is well worth the time!

  1. Seriously, that looks SOOOO good. We love to grill. We usually grill after church on Sunday. I'm going to have to look into getting the wood chip box for my hubby. We put it in tinfoil right now and poke holes in it but that looks way better.

    The wood chip box was a new purchase for my husband. He has now found a few grill accessories that he would like to get and that box was one of them. The flavor was amazing with it. Grilling on Sunday afternoons is a great idea too. I would like to just make Saturday night a standard grill night all summer. We'll see if it happens.
