Homemade Chocolate Peanut Butter Cups

A week or so ago I had a cookie exchange with some friends.  My contribution was homemade chocolate peanut butter cups.  This was a really easy recipe although it is a bit time consuming but worth every minute.  You will find the original recipe here:  Homemade Chocolate Peanut butter cups.

I will repost it for you with my notes:

  • 1 (11.5 ounce) package milk chocolate chips, divided
  • 1 cup peanut butter
  • 1/4 teaspoon salt
  • 1/2 cup confectioners' sugar
  • mini muffin cup liners

Directions

  1. Place 1/2 chocolate chips in a microwave safe container. Microwave for 2 minutes, stirring after each minute. Spoon melted chocolate into muffin cups, filling halfway. With a spoon, draw the chocolate up the sides of the cups until evenly coated. Cool in the refrigerator until firm.
  2. In a small bowl, mix together peanut butter, confectioners' sugar and salt. divide into the chocolate cups. Melt the remaining chocolate, and spoon over peanut butter. Spread chocolate to edges of cups.
Notes:  I did this two ways.  I just put them in mini muffin tins without liners at first.  Some were easy to get out and some were not.  The second time I did it I used the mini muffin liners and that worked really well.  I put the liners in the muffin tins and followed the directions.  After I coated the liners with the chocolate I put it in the freezer to set for about 15 minutes.  This was quicker!  Once I assembled them I again put them in the freezer and once they were frozen I put them in Ziplock bags.  You can eat them straight from the freezer (trust me).  One other note, when tearing off the muffin liners (before eating the cups) just tear slowly it will come off but not as easily as the store bought ones.

You can also use a Crock pot to keep the chocolate warm but be careful not to let it get burnt.  It happened to me.  These are delicious and sooooooooooooooo much better than the store bought ones.

And don't let your kids in the kitchen while your making this or you may see them disappearing.

  2. The only thing that would make these any better would be to use dark chocolate! They would be great for Thanksgiving. Hint, hint.

  6. Oh yum. I hate you for posting this. Lol.

Have you tried lightly spraying the muffin liners? I don't know if that would create a nasty residue or not, so that's why I'm asking. :)
