Menu Plan Monday - 4.11.11



I tried out one recipe from last week that used my home canned pinto beans and it was a success.  My husband loved it and so did I.  I made homemade refried beans and then made my nachos (with no meat and brown rice) with them.  I will share the recipe tomorrow.  It is so easy and delicious!  I will also be trying out some homemade baked bean recipes with my canned pinto beans.


 I also tried an interesting recipe last week which some of us liked and some of us did not.  It is called Banana Cakes - go check it out.  I personally liked it.

This week I will making some meals and also freezing extras to try some recipes out for something I am working on. I have already done several this past week and have had pretty good success.  I am planning to do another big freezer day towards the end of this month.  I haven't done one in a little while so we will see how it goes.

Lunch:
Marvelous Mini Meatloafs

Supper:

Lentils and Brown Rice Casserole
Beef and Broccoli Stir Fry with Stir Fry veggies
Firecracker Salmon
Perfect marinade for grilled steak
Sweet N Sour Beans, salad and cornbread - didn't have this last week
Sticky Chicken and Baked Potatoes, green beans


Snacks:
Chewy Granola Bars
Whole Wheat Chocolate Chip Cookies
Carrots and hummus
Apples and cheese
Popcorn

  1. Good for you for canning pinto beans! I definitely prefer my home canned beans to the dried or store-bought cans. Enjoy your week!
