One of my husband's favorite meals is nachos. My son loves it too. Pretty much the whole family does. We usually have it every other Sunday night (or try to). Yes, we are boring like that. I just thought I would share with you how we do it.
Meat Mixture:
1 lb. of ground beef
Taco sauce - about 2 T but I just pour it in until it looks good
Refried beans, one can or if your using homemade just about a cup and a half or so
Taco seasoning - about 1/4 of a cup (I use McCormick's because it doesn't contain MSG)
Water
I brown the hamburger and then drain it, add the rest of the ingredients and heat through.
We used to put this in a Crock Pot and then plate up our chips and pile on the meat mixture and all the fixins, but my friend, Connie told me of a way that her mom does it and my husband LOVES it so now I do it.
Preheat your oven to 350 and crisp up your chips in a 9x13 inch pan.
I do that for about 10 minutes while I am making the meat mixture. Now once the chips are slightly browned, spread out the meat all over the chips. Then layer on cheese - we usually use shredded but sometimes we buy the Frito Lay cheese dip (I did not say this was healthy or anything).
Bake for about 15 minutes or until cheese is very melted and browned on the edges.
Then plate it up! You can top it with lettuce, tomatoes, onions or sour cream. Whatever you like.
