Kitchen Tip Tuesday - How to make brunch for a crowd

Brunch is one of my favorite things to make and to eat.  I have gathered several recipes that I make for brunch that are fairly easy and can be made ahead.  These are my go-to recipes whenever I am fixing brunch for a crowd.  All of them can be put together the night before and baked the morning of your brunch so you don’t have as much to do on the day of.
  • Overnight Blueberry Coffeecake - make the night before and bake in the morning.
  • PW’s Cinnamon Rolls - by far the best cinnamon rolls on the planet - I make these the night before all the way up to the point where you are suppose to bake them.  I just refrigerate them and in the morning, I take them out 30 minutes before baking, then once they have come to room temperature I bake as instructed and make the icing.
  • Really Easy Breakfast casserole - just put this together the night before and refrigerate then bake in the morning!
  • Simple fruit salad - I chop up whatever fruit I have on hand and drizzle it with honey and 1 tsp. of lemon juice and put it in the fridge for the next day.  I like strawberries, blueberries, oranges and bananas best!

Thanks! I don't fix it often but love the leftover cinnamon rolls when I do.

The coffecake is one of my favorites. I even freeze it in individual size portions to reheat for breakfast. Let me know how you like it!
