Ham It Up

 
I had never made a ham before.  I was not a big fan of ham growing up and it is still not my favorite meat but I do like it now.  I went to the grocery store on Christmas Eve and they  had their ham on sale for $0.98/lb.  They also had all of their turkeys on sale for $10.00 each so I grabbed up one of each.  My mom makes a pretty good ham but I didn't have her recipe so I found one on All Recipes and it was a hit and so easy!

Apricot Brown Sugar ham
 Ingredients
  • 1 (10 pound) fully-cooked spiral cut ham (mine was 15 lbs and bone-in not spiral cut)
  • 2/3 cup brown sugar
  • 1/3 cup apricot jam
  • 1 teaspoon dry mustard powder

Directions

  1. Preheat the oven to 275 degrees F (135 degrees C).
  2. Place the ham cut side down onto a sheet of aluminum foil. I like to put the shiny side up. Mix together the brown sugar, apricot jam and mustard powder in a small bowl. Brush onto the ham using a pastry or barbeque brush. Reserve any leftover glaze. Enclose the foil around the ham and place on a rimmed baking sheet.
  3. Roast for 2 hours in the preheated oven, or if you ham is a different size, figure 14 minutes per pound. Apply the remaining glaze 20 minutes before the ham is done.
 Now, we ate that with some potatoes but we had A LOT of leftovers so now I needed to figure out what to do with the rest of this ham.  I'm telling you this ham could feed us for a month!

And finally this is a recipe my friend Connie told me about and my friend Darlene sent me the same recipe via e-mail.  I don't know the names of them but maybe some of you will:
1 pkg. King Hawaiian dinner rolls
12 slices ham
1 pkg. Swiss cheese slices (or I've used provolone slices)
1 stick butter, melted (I only use a 1/2 stick)
1 T. mustard (NOT ground mustard)
1/2 tsp. poppy seed (I never use this)
1/2 tsp. dry minced or chopped onion
 
Take rolls out of cardboard package.  Slice the rolls in half and place bottom half in a 13 x 9 casserole dish.  Place a slice of ham on each roll, followed by a slice of the cheese.  Place the top halves of rolls on top of the cheese.  Mix the mustard, poppy seed, and onion with the melted butter and carefully pour or brush over the rolls.  Place in oven @ 300 degrees for about 15-20 minutes until warm and cheese is beginning to melt.

  1. We love those ham buns... But instead of melted butter over top, we spread the butter mix (soft, not melted) inside.
