Recipes

*Fettuccini Alfredo
12 oz fettuccine pasta
1 c milk
½ c margarine
8 oz Neufchatel cheese, cubed
¼ t garlic powder
½ t minced garlic
¼ t onion salt
1 c Parmesan cheese, grated

In a large pot of boiling salted water cook fettuccini until al dente. Drain.
Combine milk, cubed Neufchatel cheese, butter or margarine, garlic powder, onion powder, minced garlic, and salt. Stir until smooth. Stir in grated Parmesan cheese and cook 2 to 3 minutes, or until blended.
Toss pasta with Alfredo sauce and serve warm.

*Tacos

1 lb ground beef
1 ½ t chili powder
½ t salt
½ t garlic powder
1/8 t cayenne pepper
¼ c water
8 taco shells, warmed
2 c Cheddar cheese, shredded
2 c Lettuce, shredded
¼ c Onion, finely chopped
1 tomato, chopped
taco sauce

Crumble the ground beef into a 1 1/2 quart casserole dish. Cover with glass lid. Cook in the microwave for 5 minutes on High. Drain, and stir in chili powder, salt, garlic powder, cayenne pepper and water. Cover and return to the microwave. Cook for another 3 to 4 minutes on High.
Fill each taco shell with about 2 tablespoons of the ground beef, then top with desired amounts of cheese, lettuce, onion, tomato and taco sauce.

*Mom’s Beef and Noodles

1-2 lbs. Round steak
1 Cooking bag
2 pkg Egg Noodles
3 pkg Beef gravy mix
Water

Preheat oven to 350 degrees F (190 degrees C).
Put steak in a roast cooking bag and use the directions on the package of the cooking bag. When the round steak is done, make the noodles. When the noodles are done, cut up the round steak into small pieces and add it in with the noodles. Use some of the water from the actual cooking bag and put that into the noodles. Make the beef gravy in a pan according to package directions. When the gravy is done add it to the noodles and beef.

*Foil Dinners

1 lb Hamburger
4 Potatoes – thinly sliced
1 lb Baby carrots
1 Onion, large thinly-sliced
Salt and Pepper to taste

Slice potatoes into thin slices, fan out on large (12" long) piece ofaluminum foil. Place 1/4 bag of carrots on top of potatoes. Place 1/4 of hamburger on top of carrots. Season burger to taste. Place thinly sliced onion on top of hamburger. Fold aluminum foil together so that it is completely sealed. Place on grill or campfire for 20-40 minutes, depending on intensity of heat. Check often. Meal is done when meat is cooked through and potatoes are tender.
