Tasty Tuesday - Cheesy Potatoes and Smoked Sausage

The picture is not too pretty but it tasted good!

Let me start this off by saying that I am not a big smoked sausage fan. My husband likes it and I rarely cook with it, but I had some on hand because I made corn chowder last week. So I was trying to think of something I would like to use it in and came up with this and I love it and so does my husband. I saw this recipe for cheesy ranch potatoes.  So I mostly followed the recipe:

I diced up about 5-6 medium potatoes (with the skin on).  I preheated the oven to 400 degrees.  I threw about 4 pats of butter in my glass 9 x 13 pan and set it in the oven to melt the butter and pulled it out after about 2 minutes.  I poured my potatoes in the buttered pan and then added more butter that I had cut into little squares.  It was about 3/4 of a stick of butter (hush, you know you like butter). 

I added chili powder, salt and pepper and stirred it, covered it with foil and baked it for an hour.  At about 30 minutes, I chopped up the smoked sausage (2 links in a package) and added it to the potatoes and gave it another stir.  After the last 30 minutes, I took the potatoes out of the oven and stuck them with a fork to make sure they were tender.  I added the dressing I had on hand which happened to be hickory bacon and onion but you could use ranch.  I just added about 1/2 cup but really I just squeezed it out until it looked good.  Then I threw on a handful of shredded cheese and stirred it again. 

I cooked it for 5 more minutes, cooled it and served it.
