Open Faced English Muffin Sandwiches

1/4 cup of diced chicken, cooked

2 tsp. BBQ sauce or Ranch Dressing

1 slice of turkey bacon, cut in half

1 slice of Swiss cheese

Open each English muffin and spread either the BBQ sauce or ranch dressing onto the half of the English muffin.  Layer with chicken, bacon and swiss cheese.  Bake in an oven at 350 degrees for 10 minutes.

NotesThese are very easy to make especially for a quick lunch or supper.  I try to always have cooked chicken in the freezer and I usually have turkey bacon cooked in the freezer to make this super quick.  These would also make good freezer lunches - just flash freeze on cookie sheets when cooked and then reheat in a microwave or in the oven.
