Menu Plan Monday, Week of August 31

Well, it is almost September and almost fall - my favorite time of year (along with spring and summer, sorry winter). Anyway, I cannot wait to visit the apple orchards and pick pumpkins and go on hay rides and have bonfires. Anyway, if you saw my Recipe Roundup, you know what recipes worked for me last week. I am picking up some more beef this week so I am hoping to have that at least a couple of nights. If you have seen this blog before, you know the drill. I keep my pantry stocked (or try to) so I make my meals from what I have here. My breakfasts and lunches are roughly the same. I try to always have a fruit and vegetable with my meals. You can view my past menus here. I only plan 5 meals because we will have leftovers one day, and may possibly eat out or get something from my meals in my freezer the other day.

This week's menu is:

Breakfast meals:

Yogurt and peanut butter toast (I usually mix in a banana or blueberries in our plain yogurt)
Homemade whole wheat waffles (from the Betty Crocker cookbook)
Amish Baked oatmeal
Eggs and toast (I usually put carrots, green pepper and onion in my mini food processor and saute them in butter and then stir in my eggs)
Freezer Smoothies

Lunch meals:

English muffin pizzas, carrots
Peanut butter and jelly and apples
Chicken Nuggets and a simple salad
Sandwiches and carrots
Cheese quesadillas with some veggies mixed in


Supper meals:

Lentil tacos, corn and homemade tortillas
Hamburgers (maybe some homemade french fries) and zucchini on the grill
Manicotti with some homemade tomato sauce (thanks to our garden) and a salad and Tammy's Italian Cheese Bread
Cheesy Beef and Rice and a salad
Homemade Pizza and salad

Snacks I will be making:
Pretzels (I didn't get to these last week)
Homemade Graham Crackers
Fresh Peaches with honey (this is easy and delicious)

  2. I have never made home-made graham crackers before. I may have to give that a try sometime. Sounds like a delicious week!
