Well, I am sitting in my kitchen watching my pressure canner, canning my green beans, so I cannot leave the kitchen. So I thought this might be a good time to do my Menu Plan Monday post. If you would like to see last week's menu, go here. I did not go grocery shopping because we are pretty much on a two week plan and I try to make meals from the staples we have at home anyway. We did have the Alfredo pizza and as usual it was a hit. The steaks were good and the short ribs were really good too. It was the first time I had made that recipe. We never actually got to the lentils and pasta so that will be on the menu this week. The breakfast and lunches stay the same. I also made the snacks and they were pretty good. I think I am going to try some more homemade snacks this week. So here is this week's menu:
Breakfast meals:
Yogurt and peanut butter toast (I usually mix in a banana or blueberries in our plain yogurt)
Homemade whole wheat waffles (from the Betty Crocker cookbook)
Amish Baked oatmeal
Eggs and toast (I usually put carrots, green pepper and onion in my mini food processor and saute them in butter and then stir in my eggs)
Freezer Smoothies
Lunch meals:
English muffin pizzas, carrots
Peanut butter and jelly and apples
Chicken Nuggets and a simple salad
Sandwiches and carrots
Cheese quesadillas with some veggies mixed in
Supper meals:
Steaks, noodles and salad (still trying to use up the last of our meat)
Wendy's quick pasta and lentils
Broccoli Beef
Honey BBQ glazed Chicken
Bacon and tomato sandwiches (we have a LOT of tomatoes from our small garden)
Calzones or Homemade Pizza
So there you have it. This week's simple menu. I try to keep it as simple as possible. It works for me! Have a great week.
