"Healthier" Bread Machine Donuts or Doughnuts - whatever

My kids love donuts.  I love donuts too but you know - they are not the best for you.  I adapted a recipe with a few healthier ingredients - try it - they are pretty delicious.  If you don't have a bread machine you could do this in your mixer as well (or by hand if you really want to go old school).


I slightly adapted a recipe from Food.com and here is the result:

Ingredients:
1 1/4 cups milk
1 beaten egg
1/4 cup coconut oil
1/4 cup sugar
1 teaspoon salt
2 cups of wheat or spelt flour (I used spelt)
1 1/2 cups of white (more if dough is very sticky)
1 1/2 teaspoons dry yeast

Directions:
1.  Heat milk up till it is warm to the touch (in microwave or on stove - do not boil).
2.  Put ingredients in bread machine as listed by your bread machine instructions.
3.   Set it on the dough cycle.
4.  Check dough if it is too sticky add a little more flour - 1 Tablespoon at a time.
5.  Once dough is done you can use it right away or put in the refrigerator overnight to rise more - lightly cover a bowl or cover a bowl with plastic wrap.
6.  Roll finished dough to 1/2 inch thick.


As you can see we used all kinds of fun cookie cutters to cut these out.

7.  Fill a cast iron skillet (or your deep fryer)  with oil (I used olive oil because it is healthier).   Heat to about 375 degrees - or test it by dropping a tiny dough ball in and see if it sizzles.
8.  Cook for about 90 seconds per side - longer if they are really thick but just don't make them really thick okay.



9.  Drain on a paper towel lined plate.

You can put different things on the donuts such as powdered sugar, cinnamon sugar and glazes.  We chose powdered sugar and chocolate glaze.


We used the glaze recipe from here.   And of course my daughter had to decorate them.


There you have it - maybe make it a Saturday morning tradition.  Just make your dough on Friday night and stick it in the fridge.  Sit it out about 20-30 minutes before you roll out the dough.
And when you say "Time to make the donuts", you really will be making donuts.
