I think I actually followed my menu plan to a "T" last week. I rarely ever do that. I have to tell you a new favorite meal that we had - Slow Cooker Carnitas, Easy Guacamole, PW's restaurant style salsa, black beans and corn. It was so yummy. I did it slightly differently than the recipe I linked to. I cooked the pork roast in water in the slow cooker for a good 16 hours on low. I took it out of the liquid and laid it on a pan and sprinkled the seasonings that it called for plus some juice and cooked it at 400 for 25 minutes to "crisp" it up.
Another thing I did this week was to use pretty dishes on the table. I am much more of a functional person and I don't think about the presentation of my food. My stepmom "T" always makes a nice presentation of her food. Even if it is just us around the table she always uses prettier bowls and nice baskets for her bread. I think I should do this for my family more often. It does mean more dishes to wash but they are worth it.
I also am going to try to make Monday's my "make ahead" days. Today I am going to try to get breakfasts in the freezer for the month (or week - whatever).
I keep breakfast and lunches simple. I do some things on the weekend to make it easier for the week. I try to serve smoothies with breakfast or at least sometime between breakfast and lunch.
Breakfast:
- Blender Batter Waffles
- Eggs and bacon and toast
- Yogurt and toast and fruit
- OAMC French toast sticks (for the freezer)
- Muffins - Using variations from the Master Muffin Mix from Home Joys with more variations
- PB & J, fruit and veggies
- Leftovers
- Mini pizzas and carrots
- Beans and Rice and fruit
- Dinner brought home by hubby
- Dinner out before an outing
- Slow Cooker Potato Soup and French Bread
- Cheesy Chili Mac and grilled cheese sandwiches
- Pizza , Easy whole wheat breadsticks, Spinach Salad OR Pizza out!
- Leftover Buffet
- Chinese Pork chops, fried rice and steamed veggies
- Blender Batter Waffles
- Cooked bacon
- OAMC French toast sticks (for the freezer)
